Ok guys, I have to be real for a moment. Over the past week I stuck to 30 Days to Fit about eighty percent of the time. I really tried but while on vacation junk finds its way into our condo. Every year on vacation we have traditions like consuming a ridiculous amount of ice cream and key lime pie, or simple things like having sandwiches on the beach daily for lunch. This year we broke some o those traditions and tried our best to conform our thinking to 30 Days to Fit. Our dinners were all fresh fish and vegetables and very healthy, but I learned something about myself this week. I learned that I need to avoid having “junk food” in the house. One large problem of mine before I started 30 Days to Fit was snacking. If we made batch of cookies and left them out on the counter every time I would walk by, I would eat one. It was the same for me in Florida. We had english muffins and I walked by them one morning and thought, “Oh I am on vacation…” That phrase will get me every time. Anyway I am telling you this to say that if you mess up, tomorrow is a new day. After Christmas many many people struggle with guilt of, “Man, I really wanted to eat right… What did I do??” But let me be the first to tell you, this Christmas season was a learning experience for me. It is difficult to break the habits of the old me, but I am determined and I will!! Tomorrow is a new day and a new start. If you are on your journey to finding the new you and getting healthy, and struggled this holiday season, let’s take this as a learing experience. Do not beat yourself up about it, because it is over and there is nothing we can do to change the past. Let’s look to the future and know that 2013 is our year and we will succeed in everything we put our mind to!! Remember that tomorrow is a new day and a fresh start. I will wake with my shake and bright new day!! Join me!
Merry Christmas to All!! Today I was reflecting on God’s beautiful creation. I was walking on the beach and stopped to pick up shells. Have you ever done that? There are so many shapes, colors and sizes. It is amazing!! As I looked past the shells onto the rolling ocean I could not help but to stand in awe at the beauty unveiled before my eyes. Today is a perfect day to marvel at the beauty of all that surrounds us, not only nature, but hug someone close and tell them how beautiful they are! Notice the small things like the birds flying overhead, or maybe the snow lightly fallen on the ground, or maybe just the warmth of your dog as they snuggle into you. It doesn’t matter where you are or who you are with, today is the perfect day to be thankful for all of the beautiful things and people around us!!
Merry Christmas Eve!! I am off to a Christmas eve service at a local church not too far from where we are staying. This evening I took an old recipe and put a fresh new spin on it. On my recipes page I have a recipe for shrimp stuffed tilapia. This evening we added coconut milk to give it a nice creamy spin. The combination of fresh seafood, coconut milk, and then grilling it made it a dynamic recipe!! So without further to do, here it is:
Tropical Shrimp Stuffed Tilapia
2 lbs Tilapia
1 lb shrimp
1 cup quinoa (cooked as directed)
3/4 cup coconut milk
4 stocks celery
1 lg sweet onion
Salt and pepper to taste
Sauté celery and onion and 1 tsp coconut oil in a large skillet until tender. Add salt and pepper, shrimp (cleaned), sage. Beat together quinoa and eggs together and add to celery/onion mix. Slice tilapia to make a pocket for your stuffing. Stuff with quinoa mixture and arrange on aluminum foil on grill. Grill for thirty minutes covered. Serve with large salad and enjoy!!
This recipe is a hit anytime and it is simple to do! This is a recipe that you can throw together and have ready in under an hour! The best way to cook is healthy and convenient, don’t you agree?
This morning my family and I went to a fresh food market right next to the ocean. While we looked around we asked of they had any grouper left, because the case was empty. The woman called out to the back room, “Hey any grouper back there?” Then I heard the most wonderful thing,”Filleting them now. They will be out in a minute”. So this evening we grilled the most amazing, freshest grouper I had ever tasted. We seasoned it with lemon pepper and paprika and after ten minutes on the grill, the fish melted in your mouth. With our fish we had a quinoa and vegetable mixture. We cooked the quinoa according to the package. We then mixed in the following: one medium red pepper, one medium yellow pepper, one small onion, one tomato and some salt and pepper. The quinoa salad as I called it, not only tasted delicious, but it had many beautiful colors to finish it off. Another part of our meal was a vegetable medley we bought at the grocery. My favorite way to buy it is in a steam fresh bag. There are many different varieties and all you have to do is place the bag in the microwave and microwave it for five minutes. The last part of our well rounded meal, was a good old fashioned salad. Because we are on vacation we had a difficult time finding a salad dressing. We went with a balsamic vinaigrette. The important thing to remember is that if losing weight is your main concern, then you want to stay away from oil as much as possible. I suggest that if you are on 30 Days To Fit you should make your own dressing. There are many different ways to make a dressing, my favorite being an avocado dressing. I love finding good food and healthy alternatives to eat! I love food!!
Have you ever thought about what life would be like without technology? What if we did not have a television and could not know what was going on in the world around us? What if the telephone was non-existent and we could not contact anyone other than face to face contact or snail mail. Arbonne is set up for the consultant to build a global business. I talk to people around the US often bouncing ideas off of one another, sharing recipes, and building relationships that , without technology would be non-existent! Every time I go to the mall the apple store is packed and everyone is always talking on their phone or listening to music on their iPod. This Christmas I am going to call the people I love to tell them I am so thankful for them. Technology is a huge blessing and I truly believe that if we use it to the best of our abilities, we are unstoppable!!
Who here likes clothes shopping? In the past I loathed shopping. It was a constant reminder of how unhealthy I had become. Shopping has become a part of my weight loss journey that I have thoroughly enjoyed!! I have loved going shopping for jeans or new tops because it was exciting to me to say, “Nope, this is too big. Better get the next size down!” I still struggle with the instinct to walk straight for the plus section when walking into Kohls. Today I received a gift of a new bathing suit. You want to hear something crazy? I have really never worn a swimsuit before. I have always worn shorts and a t-shirt for as long as I can remember. I am so looking forward to walking on the beach in a swimsuit and being proud of how look. I love that everyday is a new experience. Since I have lost the weight, I feel confident and I get to experience new things everyday. Just last week, I went to a carnival in Chicago. While we were walking around I kept thinking, “Hmm… that looks fun. I wonder what the weight limit is?” ppssssttt… gues what… IT DOESN”T MATTER ANYMORE!! Every year my sister-in-law takes me to Holiday World, and every year I have to sit out on rides because I cannot fit in the seats on that particular rollercoaster. This year I can do anything!! Life is so new and exciting. I get to enjoy life like never before!! Don’t you want to do the same?
Most people this time of year dream of snow and ice. Me? No Way!! Family tradition for me includes eighty degrees and white sandy beaches. The thing I love most? The food. Every night we find the fish market and find fresh fish and different seafood. My mother says that it is our healthiest week of the year. Every morning I go running with my little sister. Running on the sand works different muscles in your legs and I feel that I get a better exercise. In past years I was never up before the sunrise and thanks to Arbonne, I will have the energy to wake in the morning and see the majestic sun rise over the rolling ocean. What better way to spend Christmas than lounging on the beach, or parasailing a mile above the water? I am so looking forward to enjoying the grilled seafood every night and waking with a new vibrance for life. Florida here I come!!
