A new workout!!

I found a new workout!! I love it!

It is set up as a 20 minute workout and it is set up in easy circuits. It works every part of your body and it is a lot of fun! The workout went by very quickly and I had fun learning kickboxing moves and I am excited to get faster and cleaner in my moves. I love to find new workouts and Jillian Michaels will push you into shape. I am back on a routine of working out five times a week and loving the energy that it gives me! Enjoy

Curry Lunch

Today we had a wonderful lunch!!

It consisted of a large salad with Almond Ginger Dressing, homemade of course, a large batch of Curry Chicken and a side of homemade rice bread. For the salad I love to make my own dressing. I love to know exactly what is going into my food and when you make your own salad dressing you know it is safe and healthy. After you have your wonderful salad topped with raw carrots and sugar snap peas, you have your curry. The curry is very simple to make and it tastes amazing! All you have to do is:
Chicken Curry
4 large Chicken Breasts
3/4 large Onion
3/4 can Coconut Milk
2 Tbsp Curry Powder
2 tsp Merken
1/2 green apple
Pinch of Unsweetened Coconut

Combine diced onion and cubed chicken in a large saucepan with one tsp coconut oil. Cook on medium heat for about 20 minutes or until cooked through. Add coconut milk, curry powder and Merken. Simmer for five to ten minutes. Dice apple and top curry with apple and coconut. Serve over brown rice or brown rice noodles. Enjoy!!

The curry is very filling and absolutely delicious!! This meal is quick and easy and healthy and it tastes amazing. A few tips… I bought my organic Curry Powder and coconut milk(canned) at Meijers and I bought my organic chicken at Costco.

Chicken Parm Anyone?

Today I was in my kitchen trying to figure out what to have for lunch and I thought, ok what do I have in the cupboard. I saw that I had spaghetti sauce and I decided to throw together a new recipe!! I took two large chicken breasts and sliced them in half. Inside I put a small piece of goat cheese and topped it with spaghetti sauce. One quick side note about spaghetti sauce. Sugar has no business in your sauces so when I am buying spaghetti sauce I always read my labels. The sauce I used is the Classico brand. It is sugar and gluten free. The tomato and basil blend is definetly my favorite!

Anyway take your chicken drizzle it with pasta sauce and I topped it with a vegan Parmesan cheese. Preheat your oven to 350 degrees and bake for fifty to fifty five minutes. I had a simple healthy meal thrown together in five minutes and ready to eat in an hour. Simple to say my Chicken Parmesan is absolutely delectable!!

Cooking for One

Now that I am in an apartment of my own I am learning a new way to cook. I have found that grocery bills can definitely add up! My secret: Protein Powder!! My meals only cost me two dollars! I find that my fridge is full of frozen veggies and fresh fruit. I also found that Costco sells freezer packs of chicken. They come in packs of ten pounds but it is split into smaller packs to make it easy to thaw in smaller portions. There are many ways to cook in a smart way. The longer I am on my own the smarter I get with my food. My goal: save money on groceries with Arbonne’s Protein Powder and eat smart with portions and my grocery bill. Arbonne has given me a key to save money and enjoy great food too!

Guacamole!!

What better way to enjoy this wonderful day than with some wonderful food? I know I have shared this in the past, but guacamole is such a staple I have to mention it again! Yesterday I shared my discovery of bean chips, and today I want to share my guacamole recipe!
Guacamole
3 Avocados
2 Tbsp Garlic Powder
1 Tbsp Lemon Juice
Salsa of your choice

Slice your avocados in half. Throw away pit and scoop out all avocado into a medium sized bowl. Mix in garlic and lemon juice. When it comes to salsa that is up to you. Make sure it is sugar free and all natural! I like to buy a spicy salsa to give my guacamole a real kick. This recipe is a hit no matter where or whom you are with! Enjoy

Yum Yum Yum

First of all let me say sorry for no blogs the past few days. I am in the middle of moving into my first apartment and we have no wifi!! It is madness. Today I went grocery shopping today for the first time and found a treasure!

These yummy little chips are made from black beans and they are perfect for our guacamole and salsa appetizers! These chips are not genetically modified, which is very important when it comes to corn and bean chips! These chips called Beanitos are also all natural, vegan, gluten free, MSG free, corn free, and all natural. I was looking up and down the isles and trying to find something that would go well with my eating lifestyle! Tonight I am takin these chips to a party, and I am sure they will be a hit!

A New Discovery

Tonight I was making another batch of Vanilla Protein Bars and I had an adventure. We are in the process of packing and all of our almond butter and coconut milk are packed. I went to Meijers and bought almond butter and coconut milk and when I got home I discovered that my almond butter was crunchy. I had never used crunchy almond butter and I was a little taken aback. I made up the protein bars and realized that this batch was the best batch I have ever made. The crunch gave the bars a new dimension and really took the bars to a new level. I am a firm believer that we have to switch up our food and to keep it fresh because there is nothing worse than to be on a diet and to get tired of what we eat. My new secret weapon in my arsenal… Crunchy Almond Butter
